For B.Sc Psychology, Science Study at Plus 2 level is not required. You can get trained for Civil Services along with your degree program if you can manage both and if you are planning to appear for Civil Services exam after Degree. You may check the Civil Services Notification at https://www.upsc.gov.in/ and ascertain the Optional you can choose for the Mains examination. You can do your degree course in one of these subjects if you plan to take the same subject for Main. or else you can take any preferred subject at Graduation. It is not necessary that your optional should be same as the Degree subject. For General papers, there has to be General reading only. based on the prescribed syllabus. If you are planning to go for B.Sc Nursing, you must study Physics, Chemistry and Biology at the Plus 2 level. After that you have to apply for admissions based on the Notifications released by various agencies. There may be entrance examinations for some admission processes like those in AIIMS, JIPMEER, PGIMER etc. You may visit the websites of these institutions for the admission process. In Kerala admissions are based on the marks in Plus 2 examination.
